Ingredients
- 1 cup fresh Wish Farms blueberries
- 3 to 4 salmon fillets
- 2 cups brussels sprouts (halved or quartered)
- 1/4 cup chopped fresh basil
- 1/4 cup olive oil
- 3 tablespoon balsamic vinegar
- 2 cloves of garlic minced
- crushed black Pepper
- Sea Salt
- 2 Lemons, one juiced and one sliced
Directions
- Preheat oven to 400F
- Place salmon on a lined sheet pan.
- Place the cut up brussel sprouts on pan with salmon.
- Sprinkle sea salt on top of the salmon and veggies to taste.
- Wash and place your blueberries in a bowl then muddle with a fork or spice grinder.
- Combine olive oil, salt/pepper, basil, garlic, and balsamic vinegar. Then, add the mixture to blueberries
- Generously drizzle olive oil over your salmon and Brussels sprouts.
- Top the salmon with the blueberry balsamic mixture.
- Squeeze fresh lemon over the dish to preference and place lemon slices on top of veggies on the sheet pan. Sprinkle with black pepper.
- Place in oven and bake for 15 minutes.
- Serve and enjoy!
