Ingredients
Rolls:
- 1 cup warm (not hot) milk
- 3 tbsp butter
- 2 1/4 tsp instant yeast (1 packet)
- 1 tbsp sweetener (sugar, honey, etc)
- 1/4 tsp salt
- 1/2 cup mashed banana
- 1 cup whole wheat flour
- 2 cups all purpose flour
Filling:
- 2/3 cup Wish Farms Blueberries
- 3 tbsp butter, melted
- 1/3 cup brown sugar
- 1 tbsp cinnamon
- 1/2 cup mashed banana
- Pinch of salt
Icing:
- 1 cup powdered sugar
- 2 tsp milk (start with 1 tsp and add until desired consistency)
Directions
Rolls:
- Gently rinse and pat dry the Wish Farms Blueberries
- Combine all ingredients, and knead it on a floured surface for 1-2 minutes until it’s fairly smooth (add a little more flour if it’s super sticky).
- Drizzle 2 tablespoons of oil in a bowl and put the dough in the bowl, flipping the dough until it’s covered with oil.
- Cover with plastic wrap and let it rise in a warm place for about an hour or until it’s doubled in size.
Assembly:
- Sprinkle some flour on your counter and roll out the dough, adding flour if needed, until it’s a thin rectangle shape.
- Spread the filling over the dough, sprinkle fresh blueberries on top, and roll it up. Cut into 1-ish inch slices and place them on a greased or parchment-lined baking sheet, not touching.
- Cover with plastic and let them rest for about 30 mins.
- Remove the plastic and bake at 350 degrees for about 15-20 minutes.
- If desired, mix powdered sugar and milk to create icing and drizzle over the rolls while they’re hot.
