Berrylicious Bites: 2024 Recipes for our Berry Lovers!

Breakfast – Mango Raspberry Chia Seed Pudding

This recipe is not only delicious and full of antioxidants, but these mighty raspberries also help with digestive health, have anti-inflammatory properties and can help support heart health! Prep this quick and easy recipe ahead of time for an easy grab and go breakfast packed with flavor and nutrients!

Ingredients

  • 1/2 cup fresh Wish Farms Raspberries
  • 1 1/2 cups oat milk
  • 1 1/2 tablespoons Maple Syrup
  • 1 teaspoon Pure Vanilla Extract
  • 6 tablespoons Chia Seeds
  • 1 Mango chopped in cubes
  • 1 tablespoon granola

Directions

  • Gently rinse and pat dry Wish Farms Raspberries.
  • In a measuring jug or bowl, combine oat milk, maple syrup, vanilla and chia seeds.
  • Stir well and leave to set in the fridge for between 2-3 hours, or ideally, overnight.
  • Layer chia seed pudding, mango cubes and raspberries in a glass. Top with Granola and more raspberries.

Lunch – Superfood Blueberry & Greens Salad

Did you know that Blueberries are often hailed as a superfood due to their rich nutritional content! These tiny blue gems are loaded with vitamins and minerals that support bone health and can lower cholesterol. Try this easy salad recipe for a filling meal loaded with antioxidants.

Ingredients

  • 2 Cups Wish Farms Blueberries
  • 3 Cups Fresh Spinach
  • 2 Cups Fresh Kale, Chopped
  • 1 1/2 Cups Fresh Brussels Sprouts, Chopped
  • 2 Ripe Avocados
  • 1 Cup Red Onion, Chopped
  • 3/4 Cup Feta Cheese
  • Raspberry Vinaigrette

Directions

  • Gently rinse and pat dry Wish Farms blueberries.
  • Rinse and dry all greens – Spinach, kale, and brussels sprouts.
  • Chop kale and brussels sprouts into small, bite-sized pieces.
  • Dice red onion and set aside while cutting avocado into 1-inch cubes.
  • Layer your spinach and kale in a bowl, then top with chopped brussels sprouts, red onion, avocado, blueberries, and feta.
  • Dress with Raspberry vinaigrette of your choosing, then toss the salad until all ingredients are well mixed. Enjoy!

Dinner – One Pan Blueberry and Blackberry Marinated Pork Chops

Blackberries and blueberries are low in calories and high in fiber, making these berries are healthy and versatile! Layer in their cancer fighting properties and brain health benefits and they’re irresistible! This protein packed meal is a little more decadent and satisfying, offering a well-rounded combination of nutrients!

Ingredients

  • 1/4 cup muddled fresh Wish Farms Blueberries
  • 1/4 cup muddled fresh Wish Farms Blackberries
  • 2 tablespoon olive oil divided
  • 3-4 ounce bone-in pork chops
  • Kosher salt and black pepper to taste
  • 3/4 cup chicken stock
  • 1 teaspoon Dijon mustard or whole-grain Dijon
  • 1 tablespoon fresh sage chopped
  • 1 1/2 teaspoon fresh rosemary chopped
  • 1/2 teaspoon fresh thyme chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 medium apples thinly sliced
  • 1 small red onion thinly sliced

Directions

  • Gently rinse and pat dry Wish Farms Blueberries and Blackberries.
  • Season both sides of pork chops with kosher salt and black pepper and rub the muddled berries onto the meat. Add 1 tablespoon olive oil to large pan, and heat over medium-high heat. Add pork chops to pan and sear 3-5 minutes per side, (depending on the thickness) or until pork chops are mostly done. Chops will continue cooking in the sauce later.
  • Remove pork chops to a plate.
  • In a small mixing bowl, whisk together chicken stock and mustard, set aside.
  • Add remaining 1 tablespoon oil to the pan, then add apples and onions. Cook 4 minutes, stirring occasionally. Season with salt, pepper, sage, rosemary, and thyme. Stir to combine.
  • Pour in stock mixture, using a wooden spoon to gently scrape the bottom of the pan to release any brown bits (those are full of great flavor).
  • Slide pork chops back into the pan, nestling them down in between the apples.
  • Cook 2-3 minutes, until pork chops are finished cooking and liquid has reduced by half. Enjoy!

Who said eating healthy can’t be fun?! This Mixed berry dessert pizza is full of vibrant flavors and nutritional goodness. Bursting with antioxidants and vitamins, it’s a treat that not only satisfies your sweet tooth but nourishes your body. Indulge in this guilt free dessert developed by the team at Healthy Family Project.

Ingredients

  • 3 Wish Farms Strawberries
  • 1/4 cup Wish Farms Blueberries
  • 1/4 cup Wish Farms Blackberries
  • 1 egg
  • 1.5 cups rolled oats
  • 1/3 cup unsweetened shredded coconut
  • 1/3 all purpose flour
  • 2 Tbsp. brown sugar
  • 3 Tbsp. unsalted butter melted
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1 tsp pure vanilla extra
  • Pinch of salt
  • 1/2 cup vanilla Greek Yogurt
  • 1/2 lemon juiced

Directions

  • Wash and carefully pat dry the Wish Farms Strawberries, blackberries, and blueberries.
  • Preheat oven to 350 F.
  • Add egg, rolled oats, shredded coconut, flour, brown sugar, butter, honey, cinnamon, vanilla extra, and pinch of salt to a large mixing bowl. Mix until ingredients are incorporated.
  • Evenly spread the mixture into a greased spring pan and bake for 20 minutes or until golden brown.
  • Remove pan from oven and allow to cool.
  • Mix 1/2 cup vanilla Greek yogurt with juice from half a lemon.
  • Once oatmeal crust is fully cooked, use spatula to spread lemon yogurt mixture.
  • Top with sliced strawberries, blackberries and blueberries. Drizzle with honey.
