Treat yourself to a sweet summer treat with this Strawberry Lemon Posset. Made with fresh Wish Farms strawberries and Wonderful Seedless lemons, this creamy and tangy dessert is as beautiful as it is delicious!

Ingredients

  • 10 Wonderful Seedless lemons

  • 1 1/2 cups Wish Farms strawberries

  • 2 cups of heavy cream

  • 2/3 cup sugar

  • 5 tablespoons lemon juice

Directions

  1. Rinse Wish Farms strawberries and pat dry, then remove leaves.

  2. Blend Wish Farms strawberries.

  3. Warm heavy cream and sugar over medium heat on the stove, stirring gently until the sugar dissolves. Heat mixture until it bubbles lightly, but do not bring to a boil.

  4. Remove cream mixture from heat and add lemon juice. Whisk gently.

  5. Add the blended strawberries and mix until combined.

  6. Strain mixture.

  7. Scoop out flesh of Wonderful Seedless lemons.

  8. Pour the mixture into the lemon skins and refrigerate for 3 hours or until firm.

  9. Serve chilled.
