Pumpkin season is here, which means it’s time for a fun new breakfast favorite! These pumpkin french toast bites have all the seasonal flavors you love, with a sweet homemade raspberry syrup that complements them perfectly.

Ingredients

French Toast

  • 4 eggs
  • 1/2 Cup milk
  • 1/2 Cup pumpkin puree
  • 1/2 Teaspoon pumpkin pie spice
  • 1 Teaspoon cinnamon
  • 1 Pack dinner rolls (we used Hawaiian rolls)

Raspberry Syrup

  • 1/2 Cup sugar
  • 1/2 Cup water
  • 1 Cup Wish Farms raspberries

Directions

French Toast Bites

  1. Preheat oven to 300 degrees F.
  2. Cut rolls into 3-4 slices.
  3. Place sliced rolls in oven for 5 minutes, or until slightly golden brown.
  4. In a bowl, whisk together eggs, milk, pumpkin puree, pumpkin pie spice, and cinnamon.
  5. Dip each slice of roll into egg mixture, then cook in frying pan or griddle over medium heat for 3 minutes on each side.
  6. Transfer to plate and set aside in warm place while making the syrup.

Raspberry Syrup

  1. In a saucepan, combine sugar, water, and raspberries.
  2. Let syrup cook over medium heat for 5-10 minutes or until berries are cooked and sugar is dissolved.
  3. Remove from heat and let syrup cool for 5 minutes.
  4. Using a fine mesh strainer, strain syrup into bowl.
