Pumpkin season is here, which means it’s time for a fun new breakfast favorite! These pumpkin french toast bites have all the seasonal flavors you love, with a sweet homemade raspberry syrup that complements them perfectly.
Ingredients
French Toast
- 4 eggs
- 1/2 Cup milk
- 1/2 Cup pumpkin puree
- 1/2 Teaspoon pumpkin pie spice
- 1 Teaspoon cinnamon
- 1 Pack dinner rolls (we used Hawaiian rolls)
Raspberry Syrup
- 1/2 Cup sugar
- 1/2 Cup water
- 1 Cup Wish Farms raspberries
Directions
French Toast Bites
- Preheat oven to 300 degrees F.
- Cut rolls into 3-4 slices.
- Place sliced rolls in oven for 5 minutes, or until slightly golden brown.
- In a bowl, whisk together eggs, milk, pumpkin puree, pumpkin pie spice, and cinnamon.
- Dip each slice of roll into egg mixture, then cook in frying pan or griddle over medium heat for 3 minutes on each side.
- Transfer to plate and set aside in warm place while making the syrup.
Raspberry Syrup
- In a saucepan, combine sugar, water, and raspberries.
- Let syrup cook over medium heat for 5-10 minutes or until berries are cooked and sugar is dissolved.
- Remove from heat and let syrup cool for 5 minutes.
- Using a fine mesh strainer, strain syrup into bowl.
