Gluten-Free Strawberry Roll Cakes

Delight in gluten-free goodness with this strawberry roll cake! This versatile dessert recipe can be made using your favorite flour, and is sure to be a show-stopper. Pixie tip: add chopped Wish Farms strawberries to the cakes before rolling them for some extra sweetness!

Ingredients

Gluten-Free Sponge Cake

  • 1 Cup gluten-free flour (or flour of your choice)
  • 1/4 Cup milk
  • 1 Cup Sugar
  • 4 Eggs, room temperature
  • 1 Teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 Teaspoon salt
  • Wish Farms strawberries

Buttercream Frosting

  • 1 Cup (2 sticks) unsalted butter
  • 2 Cups Powdered Sugar
  • Pinch of salt

Directions

Cake

  1. Preheat oven to 400 degrees.
  2. In a bowl, combine eggs, sugar, salt, lemon zest, vanilla extract and mix with a hand mixer.
  3. Sift in flour and fold in to egg mixture.
  4. In a greased 12 x 15 baking pan lined with parchment paper, add cake batter.
  5. Bake for 8 minutes, or until fully cooked.
  6. Remove cake from oven, and gently remove cake from pan.
  7. Cut cake into 1.5-2 inch strips.
  8. Brush cake with milk.
  9. Lightly dust cake strips with powdered sugar.
  10. Pipe frosting on to strips.
  11. Roll cake strips.
  12. Top with frosting and sliced Wish Farms Strawberries.

Buttercream Frosting

  1. In a mixer, combine butter sticks, salt, and powdered sugar. Mix until fluffy and white.
  2. Place buttercream in piping bag.
