Ingredients
Gluten-Free Sponge Cake
- 1 Cup gluten-free flour (or flour of your choice)
- 1/4 Cup milk
- 1 Cup Sugar
- 4 Eggs, room temperature
- 1 Teaspoon vanilla extract
- Zest of 1 lemon
- 1/4 Teaspoon salt
- Wish Farms strawberries
Buttercream Frosting
- 1 Cup (2 sticks) unsalted butter
- 2 Cups Powdered Sugar
- Pinch of salt
Directions
Cake
- Preheat oven to 400 degrees.
- In a bowl, combine eggs, sugar, salt, lemon zest, vanilla extract and mix with a hand mixer.
- Sift in flour and fold in to egg mixture.
- In a greased 12 x 15 baking pan lined with parchment paper, add cake batter.
- Bake for 8 minutes, or until fully cooked.
- Remove cake from oven, and gently remove cake from pan.
- Cut cake into 1.5-2 inch strips.
- Brush cake with milk.
- Lightly dust cake strips with powdered sugar.
- Pipe frosting on to strips.
- Roll cake strips.
- Top with frosting and sliced Wish Farms Strawberries.
Buttercream Frosting
- In a mixer, combine butter sticks, salt, and powdered sugar. Mix until fluffy and white.
- Place buttercream in piping bag.
