Ingredients
Blueberry Breakfast Sausage
- 1 Cup Wish Farms Blueberries
- 2 LBS Ground Pork
- 2 TBSP Fresh Parsley
- 2 TBSP Maple Syrup
- 2 TSP Salt
- 2 TSP Sage
- 1/4 TSP Margarine
- 1 TSP Ground Pepper
Blueberry Bourbon Maple Syrup
- 4 Cups Wish Farms Blueberries
- 1 Cup Maple Syrup
- 2 TSP Corn Starch
- 2 TBSP Water
- 2-3 TBSP Bourbon

- Chop fresh parsley, then wash blueberries and pat dry before combining all ingredients in a large bowl.
- Shape and make patties, then on a medium pan brown the patties on each side ensuring they are cooked all the way through.
Blueberry Bourbon Maple Syrup
- Place blueberries in a medium saucepan and mash them lightly with a fork until they’ve released some of their juices.
- Heat over medium-high heat until simmering, reduce heat, and cook for 15 minutes more, stirring occasionally.
- Strain blueberries through a fine mesh sieve into a clean saucepan, making sure to press as much juice out of the berries as possible; discard the mashed berries.
- Add the maple syrup and bourbon to the blueberry juice, bring to a boil over high heat, reduce heat, and simmer for 10 minutes.
- Combine corn starch and water in a small bowl, and whisk it quickly into the syrup mixture; continue whisking for 30 seconds.
- Remove from heat and serve. The syrup will thicken slightly as it cools; if desired, whisk in water 1 teaspoon at a time to adjust the consistency to your liking.
