Ingredients
For the Salad- 2 cups spinach (or substitute for spring salad mix)
- 1 cup cooked chicken, shredded or diced (grill, sauté or purchase rotisserie chicken from the deli)
- ½ cup Wish Farms strawberries, sliced
- ½ cup Wish Farms blueberries
- 1 clementine, segmented and cut in half
- ½ grapefruit, segmented and cut in half
- 1 cup avocado, peeled, pitted and diced
- 1 cup cucumber, peeled and sliced
- ½ slivered almonds
- ¼ cup light feta or blue cheese, crumbled
- 2 green onions
- Cilantro to taste
- 1 lemon, juiced
- 3 tablespoons Extra Virgin Olive Oil
- 1 cup Wish Farms strawberries
- 2 teaspoons water
- ½ tablespoon honey
- Pinch of salt
- 1 tablespoon balsamic vinegar
Directions
For the Salad- In a large salad bowl, toss all ingredients together until combined. Drizzle or toss with vinaigrette.
- In a small stove top pan, add diced strawberries, water, honey and salt. Let the mixture simmer for 5-10 minutes. Set aside to cool.
- Combine strawberry mixture, olive oil, and balsamic vinegar in a food processor until creamy.
- This salad is full of so much flavor. With juice from the citrus and berries, you may not even need salad dressing.
- For a light and quick option, squeeze the juice of half a lemon and drizzle approximately 2 tablespoons of extra virgin olive oil.
- Other protein options that would be great with this salad include: grilled, baked or rotisserie chicken, salmon, pre-cooked apple chicken sausage, or roasted turkey
