Watermelon is the epitome of summer.
It is the perfect healthy, sweet, delicious and refreshing snack for your hot summer adventures at the beach, pool, or picnic!
Luckily our favorite sweet indulgence isn’t really an indulgence. No ‘cheat’ meal here ladies and gents!
Packed full with vitamins and nutrients we no longer have to feel the guilt of finally enjoying something sweet and flavorful after the plethora of salads and meals made for mice.
When it comes to watermelon…the more the merrier!
Watermelons are an excellent source of several vitamins including vitamin A, which helps maintain eye health and is an antioxidant; vitamin C, which helps strengthen immunity, heal wounds, prevent cell damage, promote healthy teeth and gums; and vitamin B6, which helps brain function and helps convert protein to energy.
Feeling dehydrated? Most of us don’t get enough water intake throughout the day; however, since watermelons are mostly water, consuming them gives you that extra hydration you needed!
In conclusion….EAT MORE WATERMELON!

Fluffy Watermelon Salad
3 envelopes plain gelatin
1 cup boiling water
3 cups watermelon puree*
1 cup lightly toasted coconut
4 cups whipped topping
2 cups shredded sweetened coconut
Dissolve the gelatin in the boiling water and stir into the watermelon puree. Pour the mixture into a 9 x 13 casserole dish and chill overnight or until very firm. Lightly toast cup of coconut and set aside to cool. Add layer of whipped cream to serving dishes. Cut chilled gelatin/puree mixture into small squares and place in serving dishes over layer of whipped cream. Top with coconut. Add dollop of whipped topping and sprinkle with toasted coconut. Serve immediately.
*To make the watermelon puree, remove seeds from fresh watermelon and cut into large chunks. Place in a blender and process until smooth and well pureed.
